I found it beyond difficult as a vegetarian that can't eat eggs. I do eat a bit of fish though. Vegan? I honestly don't think it would be worth the effort. Most nuts are out. All pulses and grains are out. Many veges and all fruit are out (except avocado). It's a high fat diet. You'd be living on guacamole and drinking cups of oil. Even things like coconut yoghut have low, but substantial enough carbs, that it's not feasible. Low carb flours are still high enough in carbs to make them poor substitues. But to actually answer your question: guacamole, salads, peanut butter, coconut milk curries, tofu, most oils, a few almonds or cashews..

Keto diet requires you to eat meat. Its a very low carb diet, that is training your body to rely on FATS for energy instead of sugars and carbs... Theres no such thing as "vegan keto"

That is a very restrictive diet. You need to speak to a doctor before you embark on that. Vegetable stir frys. Nothing processed. Nuts. Olive oil on salads. Mushrooms. Also Kimchi - check it's not made with fish sauce. Green vegetables. Red berries.
