you can use ANY liquid to hold the breading onto the egg plant: alternative milk, water, a little oil mixed with water, Watered down tomato sauce, what ever trips your trigger.

You could use a traditional mixture of ground flax seed and water. Or just dip the eggplant in milk if you use milk then in your breadcrumbs. If you do not use milk then you could roast the slices then cover with the sauce and the cheese that you would do after you dip in the egg wash and bread crumbs. You could also try a light coating of olive oil then the breadcrumbs. You just want something sticky to make the crumbs adhere. make sure you pat the eggplant dry so the oil or anything else you decide to use sticks to it.

Flegg A “flegg” is an egg replacer made from flax meal and water. Just mix 1 Tbsp flax meal with 3 Tbsp of hot water and use in place of the egg. Note that you can NOT just throw some flax meal in the batter. You’ve got to mix the flax meal with the water separately! I would recommend getting nutritional yeast. It is used for the same purpose as parmesan.
