When all the wildlife poops everywhere in a large wilderness area, are there subsequent sanitation/disease problems for any of the wildlife?

because its not concentrated and can break down and benefit the soil ect ... unlike a cage or a city where its too much for the environment to do anything with ..

No, it doesn't cause any issues unless you get a lot of it in a stagnant water the animals are drinking out of.

There can be if the population becomes out of balance for some reason, and the species in question becomes too numerous for the space they are living in. In general, though, no, as long as the animals are spread out enough.

Animals move and sh*t, humans stay still, If a pack of lions stayed under the same tree and shat in the same patch of grass there would likely be sanitation issues but I'm not certain.
