Quit today, forgot to erase my company computer. What will happen to my personal files on the computer?
Will IT simply erase my profile? or will my manager get my password and login as me? Will IT also try to recover erased files folders?

It depends on your company's policy. I interned as an IT intern at a local dried fruit facility. When someone was fired or quit, they wouldn't erase their profile. First, they lock that person out of everything, email, computer login, etc. They keep the profile for legal reasons and if the replacement of that person might need access to something that the ex-employee worked on or managed.
