I can trace my Norwegian ancestors all the way back to the 1600s on FamilySearch. How accurate is it?

No, you can't 'research' on all or any website as most real records from any country in the world are not online and ONLY images of the real record are real, there are many indexes, transcriptions, collections, etc none are real records and can be used as a clue about where to look offline for that record https://www.familysearch.org/wiki/en/Norway_Online_Genealogy_Records

Family trees on ANY website should be verified with actual records before accepting anything in them as fact. There is no way the websites can verify all the information in subscriber submitted family trees as it would be far too costly. Even when you see the absolute same information on the same people from a ton of other subscribers that doesn't mean it is accurate as too many people copy without verifying.
